Cinnamon Pancakes w/ Peaches & Blueberries |
Peach season is upon us and there is nothing better than the smell of fresh peaches. I decided to caramelize a couple of peaches in a frying pan with about 2 tablespoons of margarine, about a half a cup of brown sugar, a tsp. of vanilla, and some dashes of cinnamon on medium heat. Then just before the peaches were done and soft, I added some frozen blueberries and it made a wonderful sauce with the peaches. Here is the recipe I used for the thin cinnamon pancakes which makes around 8-10 small size pancakes. You can top them with some whip cream or plain yogurt! This would be great for breakfast or dessert.
- 1 cup unbleached all-purpose flour or whole wheat pastry flour
- 1 tablespoon sugar or honey, or to taste ( I used honey )
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup of milk
- 2 tablespoons canola oil or applesauce
- 1 tsp of cinnamon
- 1 egg
