Whole Wheat Waffles

Whole Wheat Waffles
Today I borrowed my mom's waffle maker to try out some... waffles! I found a basic recipe online but I wanted to make them more healthful by using whole wheat flour and applesauce. It called for 6 tablespoons of oil so I did 3 tablespoons of olive oil and 3 tablespoons of unsweetened applesauce. I also added in about a teaspoon of pumpkin spice for some seasonal flavor. Waffles can be enjoyed any time of the day so if you have a waffle maker and don't use it very much, dust it off and try this recipe out!

Ingredients - Makes 4 Waffles

  • 2 cups all-purpose flour (or whole wheat)
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 6 tablespoons vegetable oil
  • 2 eggs, separated

Directions

  1. Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder and salt. Stir in milk, oil and egg yolks until mixture is smooth. In a separate bowl, beat egg whites until soft peaks form. Gently fold egg whites into batter.
  2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden; serve hot.
