Garlic Mashed Red Potatoes |
Today I took my oldest, Leeland, to harvest some potatoes from our family organic garden! He helped to dig them out and put them in the basket. I love teaching him about plants, gardens, and the food we eat. I think it's important for kids to know these things and to see where it all comes from! He and his little brother may be a little young right now to figure it out, but next summer and the years to come they will learn to love working in the garden along side their grandparents.
For supper, I found a recipe for
Garlic Mashed Red Potatoes and gave them a whirl. They were really creamy and had great garlic flavour. They're best with the skins left on for extra nutrition and I made mine with skim milk and margarine with fresh chopped parsley. Thank you, garden!
Ingredients
- 8 medium red potatoes, quartered
- 3 cloves garlic, peeled
- 2 tablespoons butter or stick margarine
- 1/2 cup fat-free milk, warmed
- 1/2 teaspoon salt
- 1/4 cup grated Parmesan cheese
Directions
- Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until the potatoes are very tender. Drain well. Add the butter, milk and salt; mash. Stir in Parmesan cheese.
