Crispy Italian Salmon w/ Dill Sauce

Crispy Italian Salmon w/ brown rice, asparagus, naan bread, spinach & dill sauce
Here is another way of doing salmon. Dip it in a bowl of some beaten egg and then dip it in a bowl of some Italian bread crumbs (then repeat the process). Heat up your frying pan ahead of time with some olive oil and fry up your salmon for about 2 minutes on each side (until they are a golden brown color). Then pop them in a 350 degree oven on a glass sprayed baking dish for about 7 minutes and you have a crispy piece of salmon on the outside but nice and moist inside!


Dill
This past week I picked up some herbs (from Sweet Valley Herbs) for my outdoor planter and used some dill to make my own dill sauce. It was super easy and really delicious. Just add a few tablespoons of plain yogurt (or mayo or sour cream if you don't have yogurt) then add a tablespoon of Dijon mustard, a bit of lemon juice, and some fresh chopped up sprigs of dill (or dry dill) and you have a tasty little sauce to go on top of your salmon!


Looking forward to creating more fresh dishes with some of the herbs from my planter. Herbs are great for adding that extra bit of 'wow' to your meal!
