Panko bread crumbs (according to Wikipedia) is 'used in Japanese cuisine as a crunchy coating for fried foods made from bread baked by passing an electric current through the dough,yielding bread without crusts, and it has a crisper, airier texture than most types of breading found in Western cuisine.' To prepare the fish for breading, all you need is some flour (depending on how much cod you have but enough to coat it) with some salt and pepper in with the flour, then dip it into some whisked up egg, and then into the bread crumbs. I fried mine up in the frying pan with some olive oil (about 5-7 mins on each side). It was a nice change from the Italian bread crumbs and had a nice crunchy texture.
