Pumpkin Orzo

Pumpkin Orzo w/ Pepitas 
Here is a recipe for Paula Deen's Pumpkin Orzo. We found it a little on the bland side when taste testing so I added some onion powder but I think it could have been given a bit more kick... maybe some more ginger or even some nutmeg? I had to double the recipe and adjust it since I needed enough for 6 people and 2 kiddos. It was a nice side dish to our slowcooked ham which had tons of flavor so I guess it all evened out in the end.


Ingredients

  • 1 1/4 cups chicken broth
  • 3/4 cup canned pumpkin
  • 2 tablespoons butter
  • 1 teaspoon honey
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup orzo

Directions

In a medium saucepan, combine the chicken broth, pumpkin, butter, honey, balsamic vinegar, ginger, salt, and pepper. Bring to a boil over medium-heat, then add the orzo. Reduce the heat to low, and simmer, stirring frequently, until the orzo is tender, about 15 minutes. Serve immediately.

I love orzo and this looks like a nice fall side dish...the color is so pretty!
