Brainy Brownies & Pasta Sauce

So I picked up some ingredients the other day so I could try out some of the 'sneaky' recipes and so far I am very pleased! Today I made Brainy Brownies and my own version of pasta sauce with help from the cookbook. Both turned out very well and not a hint of veggie was noticed!

I had to substitute some things like the unsalted butter to margarine and unsweetened cocoa to just regular stuff for the brownies but that would be the only change. I made up my purple puree (spinach and blueberries) and froze what was leftover and had to make up the flour blend and put the leftover in a ziplock bag. At least they are all done for next time or recipe to use. I also had to make the orange puree (sweet potatoe and carrots) for the pasta sauce and just added it to my Ragu pasta sauce with other seasonings (chili and red pepper flakes). I added my lean ground cooked up beef to it along with whole grain spaghetti noodles. It tasted just like the usual spaghetti we eat. The brownies turned out great for being my first time trying them. No taste of spinach at all but had more of a blueberry flavor to them.

Overall I am satisfied and proud I was able to accomplish all this cooking with a 10 month old! We had a great supper and a great dessert!

The Sneaky Chef

So what felt like forever what I ordered on Amazon... has finally arrived! I got a used The Sneaky Chef by Missy Chase Lapine and have been skimming through it all night. I'm very excited to try some of her recipes out to see just how sneaky I can be about putting healthy back into our meals.

My 10 month old son has never been ill since his birth and we have had no issues with him, thank God for that, and my husband desperately wants to start eating healthier without really eating the veggies which has been the biggest challenge. I've also had no desire for much of anything healthy either from this pregnancy, but I know that in a few months after he is born I'll be back into healthy mode to rid the pregnancy weight which I have no desire lugging around. So here's to the new cookbook! I will try to keep my blog updated as I try out some of the recipes that work out and share them with you! I can't wait to get sneaky... hehe!

Chocolate Cake with Strawberries

Wow, ever get a craving for chocolate cake? When my pregnancy cravings hit I don't ignore them... I satisfy them! This is just your simple chocolate box cake recipe with chocolate frosting and sliced strawberries hugging it with drizzled chocolate sauce. Chocolate and strawberries are such a great match! After you have a slice or two, make sure you put it in the fridge... or you will get fuzzy strawberries like I did. :) Enjoy!
