Here is a cupcake recipe that I got from my Tommy Europe Fitness Community which calls for no eggs, no oil, or butter. Perfect! All you need is a Yellow cake mix and a20 oz can crushed pineapple in juice (do not drain). Add the whole can to the mix and stir it up. Bake at 325 or 350 degrees for about 22-25 minutes. You can add a whipped icing or whip cream and garish with some toasted coconut and if you don't then you have an easy, low calorie cupcake (94 calories to be exact and 0.8 grams of fat)!
