Pancakes work great for any meal of the day. Today we enjoyed some caramelized pear pancakes for lunch. Take one ripe pear and slice it up. Add it to some butter/margarine, brown sugar, cinnamon, nutmeg, and vanilla to a frying pan on medium heat. You can use different substitutes instead of brown sugar like maple syrup. I added some dried cranberries and pecans to the mix and drizzled caramel sauce all around. This was a great treat for hubby and I as we have been battling colds the past couple of days. Both of the boys have been sick the past couple of weeks and after lots of cuddles, sneezes and shared runny noses it was bound to catch up with us! We're on the mend now... come on Spring!
