Carrot Muffins

Carrot Muffins
I got quite the chuckle after my friend made a batch of carrot muffins from her Mennonite cookbook she had and told me the recipe 'could feed an army.' She was kind enough to half the recipe for me so that it made 12 muffins instead of 24. I love carrot muffins so I had to try out her recipe! I used applesauce in place of the oil.

 Here it is in order to made 12:
1cup brown sugar
3/4c whole wheat flour
3/4c white flour
1tsp baking soda
1tsp baking powder
1tsp cinnamon
1tsp vanilla
1/2 cup milk
1/2 cup oil
1/4 cup chopped raisins
1cup grated carrots
Pinch salt
2 eggs

Bake 375 for 15 min
