Brown Rice Turkey Casserole

Turkey Casserole
Turkey leftovers are coming to an end and the best way to wrap it all up is in a casserole! We enjoyed a great family turkey dinner, next day turkey sandwiches, turkey soup, and now turkey casserole! This casserole made 9 good size pieces in an 8" square dish. To make this casserole you just need to make 2 cups of rice (brown or white) then add a can of cream of mushroom (or chicken or any other cream you may have) soup and some onion powder to the pot with a half a cup of milk. Add your cubed up turkey (or chicken, ham, pork etc.) Then from there it's up to you what you want to add for your veggies. I boiled up some frozen corn and peas then added that to the pot mixture and stirred it all up! Then added the mixture to my baking dish and grated some cheese on top and sprinkled some Italian bread crumbs. Turn your oven to 350 degrees and cook it for about 20 minutes. I love how my little guy ate his supper right up... and had seconds!
