Monterey Jack & Spinach Stuffed Chicken

Monterey Jack Cheese & Spinach stuffed Chicken w/ Whole Grain Rice

This is a way to have fun with your chicken... stuff it! Just slice it down the middle and make a pocket and stuff it with whatever you want then close it up (use toothpicks if needed). I wrapped my hubby's chicken up with a couple slices of bacon and it adds lots of flavor. The chicken was also tossed in some Italian bread crumbs. As a side we had some whole grain rice (for a fiber boost) with some fried asparagus, mushrooms, and boiled corn. What would you put in your chicken?
