Happy Pancake Day!


Yes, it's Shrove Tuesday on the calendar! Sometimes it's fun to celebrate certain days on the calendar that usually we would just pass by. We usually end up having pancakes about once a week anyways but I wanted to really try something a little different with these pancakes. I did mine from scratch using this recipe

Ingredients (makes 8-10 pancakes)

  • 1 cup unbleached all-purpose flour or whole wheat pastry flour
  • 1 tablespoon sugar or honey, or to taste
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup Silk Pure Almond Original or Vanilla
  • 2 tablespoons canola oil
  • 1 egg

Directions

  1. Whisk together flour, sugar, baking powder and salt in a small bowl. In a separate bowl, whisk together Pure Almond, oil and egg. Add flour mixture to egg mixture and stir just to moisten - a few lumps are fine. Cook pancakes on a griddle over medium heat. 



This recipe was awesome. I used whole wheat flour, skim milk, and added some cinnamon. I made the mix up in the afternoon as well as the whipping cream and left them in the fridge until later. Also made my own strawberry puree sauce for the topping.


After the boys were in bed, my hubby and I enjoyed some hot pancakes with layers of crunchy peanut butter and strawberry sauce with some whip topping and caramel sauce, left over baked beans, and hashbrowns. These pancakes were so delicious! What a treat... but I think the best part were the coffees hubby brought home for us to enjoy the meal with! Happy Pancake Day!
