This is a great 'no oil' muffin recipe for our 2nd week challenge. It's low in sugar and also high in fiber. Unsweetened applesauce is the key ingredient which replaces the oil in this recipe. I found a great website which explains how to use and substitute applesauce in recipes which call for oils or melted butter. You can cut so many calories and fat from your baking by simply making one small change. Check out this site for some great ideas! http://www.ehow.com/how_4535777_substitute-applesauce-oil.html.
These muffins were moist and very blueberry! I used frozen blueberries and added a teaspoon of cinnamon to this recipe but that was the only improvising I did. Enjoy using applesauce in other muffin recipes that you come across to make your snacks more healthful!
