Banana Bread

Banana Bread w/ Peanut Butter Frosting
Nothing beats the smell of hot banana bread fresh from the oven. I still consider myself to be a 'baking' newbie so I have to admit this was my first bread. I bought two bread pans today and I'm looking forward to many more breads. I searched allrecipes.com and found this easy banana bread recipe which made one loaf. My mom used to put a peanut butter frosting on her banana breads once in awhile so I figured it would be a great addition and found another recipe for a peanut butter glaze. I made my icing more thick without adding too much water but if you want it to have a glaze then just water it down more. I also only had crunchy peanut butter on hand but I think it made it that much better! Here are the recipes:



Banana 'banana' Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe bananas

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.


Ingredients

  • 4 teaspoons water
  • 2/3 cup powdered sugar
  • 1 tablespoon creamy peanut butter

Directions

  1. Stir together the water, sugar, and peanut butter until smooth.
