Potato Cheese Frittata
The best part of looking at other food blogs is getting inspired! I've never made a frittata before but I knew it was kind of like making a quiche without the crust. I decided to make mine with some lean ground pork, potatoes, and cheese. I would have preferred to have added spinach and mushrooms to this but sometimes you have to meet in the middle with the 'picky' eater in the family so I omitted any veggies.


I actually ended up improvising ingredients for this frittata by following this recipe Bacon Cheese Frittata. I boiled up my cubed potatoes and fried up my pork with some added seasonings (salt, pepper, thyme, oregano, onion powder) and layered them in my skillet. The potatoes were at the bottom then topped off with the pork and then added some shredded cheese. I whisked up the 6 eggs with the cup of milk and poured it all over and topped it off with some dried parsley. Preheat your oven to 350 degrees and cook the frittata for about 30-35 minutes right in the skillet!



This was a great supper all in one little pie. I really enjoy easy suppers like this and they make for great leftovers!

Michelle-Thank you for your comment on my blog, and I'm so happy that I inspired you to make a frittata. I must say your frittata is fabulous. Love the addition of the meat, which made it a hearty and comforting dish that you can eat any time of the day, and not just for breakfast. Your frittata turned out amazing...great job!
