Potato Cheese Frittata |
I actually ended up improvising ingredients for this frittata by following this recipe Bacon Cheese Frittata. I boiled up my cubed potatoes and fried up my pork with some added seasonings (salt, pepper, thyme, oregano, onion powder) and layered them in my skillet. The potatoes were at the bottom then topped off with the pork and then added some shredded cheese. I whisked up the 6 eggs with the cup of milk and poured it all over and topped it off with some dried parsley. Preheat your oven to 350 degrees and cook the frittata for about 30-35 minutes right in the skillet!
This was a great supper all in one little pie. I really enjoy easy suppers like this and they make for great leftovers!

Love the addition of the meat, which made it a hearty and comforting dish that you can eat any time of the day, and not just for breakfast. Your frittata turned out amazing...great job!
